FOOD AND DISEASE PREVENTION


The kind and amount of substances ingested is a major determinant of human health. In this course we will discuss the evolutionary, cultural and historical reasons for dietary choices and their relation to disease patterns. We will also focus on kinds of foodstuff, lack of essential nutrients, and ingestion of artificial products that lead to disease; the evidence for and against dietary supplements and "health food;" weight-control diets and special eating regimes; and examine dietary choices from worldwide cultures (e.g., Mediterranean and Asian diets) that seem to offer optimum protection against disease and maximise longevity.
